Yups Pilau Rice

Ingredients |
Procedure |
20-30 saffron stamens |
Add to a couple of tablespoons of hot
water and set to one side |
8oz basmati rice (approx 1 and 1/3 cups) |
Rinse in cold water and set to one side
until required |
3 tbsp oil 2 inch cinnamon stick 4 cardamom Approx. 4 cloves Approx. Almonds (sliced) 3-4 bayleaves |
Heat oil, add ingredients and fry for a
few minutes |
1 sliced onion |
Add onion and fry for a few minutes until
they turn golden |

Add drained rice and stir for 5 minutes |
1 pint pilau rice stock or water (use 2 stock cubes for 8oz rice) A pinch of salt |
Add stock and salt. (Pilau rice seasoning is also available if
you can’t get the stock cubes) Bring
to the boil then simmer for 15 minutes |
Handful of cashew nuts and sultanas |
Dry roast nuts in a pan and add to rice
with sultanas |

Pour the saffron coloring over the
rice. Stir once and cover. Leave in a warm part of the oven for 20
minutes or so until it becomes fluffy. |

Rice to water ratio is 1
to 2.

will feed 3 people

people)
