Yups Pilau Rice

 

Serves 4

 

Ingredients

Procedure

20-30 saffron stamens

Add to a couple of tablespoons of hot water and set to one side

8oz basmati rice (approx 1 and 1/3 cups)

Rinse in cold water and set to one side until required

 

3 tbsp oil

2 inch cinnamon stick

4 cardamom Approx.

4 cloves Approx.

Almonds (sliced)

3-4 bayleaves

 

Heat oil, add ingredients and fry for a few minutes

1 sliced onion

 

Add onion and fry for a few minutes until they turn golden

 

 

Add drained rice and stir for 5 minutes

 

1 pint pilau rice stock or water  (use 2 stock cubes for 8oz rice)

A pinch of salt

Add stock and salt.  (Pilau rice seasoning is also available if you can’t get the stock cubes)  Bring to the boil then simmer for 15 minutes

Handful of cashew nuts and sultanas

Dry roast nuts in a pan and add to rice with sultanas

 

Pour the saffron coloring over the rice.  Stir once and cover.  Leave in a warm part of the oven for 20 minutes or so until it becomes fluffy.

 

 

NOTE

·         Rice to water ratio is 1 to 2. 

·         1 cup of dry rice (6oz.) will feed 3 people

·         (1 1/3 cups will feed 4 people)
