Yup’s Chicken Balti                                             (tape 15)

 

Serves 4

 

Ingredients

Procedure

3 tbsp vegetable oil

3 medium onions chopped

Heat oil and fry onions until golden brown

3 chopped tomatoes or a tin

Add tomatoes and stir in well

4 black peppercorns

2 large black cardamom pods

1 cinnamon stick or 1 tbsp ground cinnamon

½ tsp cumin seeds or 2 tsp ground cumin

1 tsp chilli powder

1 tsp garam masala

3 garlic cloves (or 1 tsp garlic paste)

2 tsp chopped fresh ginger (or 1 tsp ginger paste)

4 green chillies chopped

1 tsp salt

Add to above.  Cook and stir for 5 minutes constantly.

1lb 12oz (800g) fresh chicken breasts cut into 1” cubes

Add to above and cook for 20 mins or so until meat is tender.

2 tbsp natural yoghurt

Remove from heat and stir in yoghurt

2 tbsp fresh coriander or 1 tbsp ground coriander

2 tbsp lime juice or 4 tbsp lemon juice

Stir in to above and serve with a garnish of coriander

 

Optional extras that could be added a few minutes before serving:

 

A handful of freshly chopped coriander

A handful of baby spinach

A handful of roasted cashew nuts or sliced almonds

 

Serve with a garnish of coriander
